Pork collar pot roast with stewed tomatoes and onions

Ingredients

  • 1 kg Scan Omega 3 pork collar
  • 1 tsp Black Lava Coarse Salt
  • 1 tsp black pepper
  • ½ pcs lemon, juiced
  • 1 tbsp grainy mustard
  • 1 pcs yellow onions, diced thumb size
  • 5 cloves garlic, cut fine
  • 1 can chopped Italian tomatoes, canned
  • 1 sprig fresh rosemary
  • 1 tbsp fresh parsley, cut fine

Method

  1. Dry Omega 3 pork collar with kitchen towel and pan-fry to brown colour in the pot.
  2. Rub with lemon and grainy mustard. Sprinkle Black Lava Coarse Salt and black pepper all around.
  3. In a separate pan, saute onion and garlic until brown and then add into the pork.
  4. Add tomatoes and rosemary.
  5. Start cooking on a high heat, until the sauce bubbles.
  6. Cover with a lid and turn heat down to low.
  7. Simmer until you can easily push a knife through the meat. (approximately for 2 hours)
  8. Remove pork from the pot and slice.
  9. Serve with the sauce, sprinkle Black Lava Coarse Salt and parsley on top.
