Pork chop caramelized with black pepper sauce

Pork loin:

  1. 4 pcs or Scan Omega 3 pork loin slices boneless cut to 2 cm/1 inch thick pieces
  2. 1 tbsp vegetable oil
  3. A pinch black pepper, cracked
  4. 1 tsp Black lava coarse salt


  1. 1 tsp vegetable oil
  2. 1 pcs shallot onions, cut fine
  3. 50 ml maple syrup
  4. 1 tsp black pepper, cracked
  5. 2 tbsp wine vinegar, garnished with red wine, white wine, cider, sherry, etc.; use fresh thyme or rosemary, if available.



  1. Heat up a pan to medium heat with oil.
  2. Add shallot onions, cook until slightly brown.
  3. Add wine vinegar.
  4. Add maple syrup.
  5. Add black pepper. (and fresh herbs if available).
  6. Reduce heat and cook for a few minutes until thick.

Pork chops:

  1. Cut Omega 3 pork loin into chops.
  2. Sprinkle with black pepper, and black lava salt.
  3. Heat up a pan to high heat with oil.
  4. Pan-fry both sides, 4-5 minutes in total.
  5. Add sauce, let the sauce cover the chops on all sides.
  6. Serve.
