Pan-fried Pork Collar Mini Steaks with Apple Mustard by Chef Jaakko Sorsa

Ingredients

Pork Collar:

  • 800g Omega 3 Pork Collar
  • 1 tbs cooking oil for pan-frying
  • salt
  • black pepper

Apple Mustard:

  • 1 pcs apple, peeled and cut to cubes
  • 1/2 onion, cut fine
  • 100 mL Dijon mustard
  • 50 mL fine sugar
  • 1/2 tsp salt
  • 25 mL white wine vinegar

Method

Pork Collar:

1. Take the Omega 3 Pork Collar out of the fridge 20 minutes prior to cooking.
2. Cut pork collar to even slices, 1 cm thick
3. Pat dry, season
4. Take a non-stick pan and let it warm up on high heat for a minute, until the pan is very hot
5. Add oil, add pork collar mini steaks
6. Depending on your pan size, do not fill the pan for more than half to avoid it cooling down
7. Cook 30 seconds on each side
8. Add water to the pan and cover
9. Cook on low heat until tender, around 10 minutes
10. Serve with apple mustard and your favorite vegetables

Apple Mustard:

1. Place all in ingredients in a sauce pot
2. Cook on medium heat, around 10 minutes, until apples and onions are soft
3. Use kitchen blender to smoothen
4. Cool down for later use or serve lukewarm
